Old friend still talking to me! (an ode to flour)

Fed my old friend today while waiting for kettle to boil first thing this morning…by noon when came in for lunch it was overflowing! She’s {still} alive!!

Had to move to larger jar as overflowed after morning feeding!

It was so bubbly that it topped the banks of the jar I had it in! Can’t wait to start baking with it on the weekend.

As a somewhat humorous aside…I finally sent in my 23-and-Me DNA kit…and one of the tests indicated I had a “slightly increased risk of developing celiac disease”…that would really be upsetting to me…as since we discovered that Costco Business Centre sells 20KG bags of flour…we seem to be going through more than ever! In fact since Spring 2019 we’ve gone through 20KG of 00 Pizza Flour….and 2 20KG bags of AP flour (and part of our isolation prep was to grab 2 more 20KG bags from my last trip to Costco! We constantly have a batch of this excellent no-knead bread, or have-to-try-and-NOT-eat-the-whole-thing Blueberry Walnut Bread on the go…regularly bake bagels (current favourites are Maple French Toast, these better than bagel store Cinnamon Raisin and Blueberry). When we have a fire in the pizza oven also regularly make pita bread, naan and English muffins to use up some of the excellent intense heat produced by the wood fire.
