Reacquainted with an old friend…

..I’ve been meaning to reconnect for ages..but never seemed to find the time … however this morning (despite sleeping in until 8:30!!)… I just did it!
Several years ago I mixed flour and water … let it sit on the counter for a while … and presto! A sour-dough starter was born! I cared for it (feeding it and using the excess) for a good two years. Of course for breads (that unfortunately never turned out exactly like I was expecting …) but also in pizza dough or pita bread. Then gradually it just stayed in it’s home in the fridge … getting further and further back until that’s where it stayed, neglected . Over the years I’ve checked on it (there was a clear liquid on the top – smelled like vinegar) and it was still flour-colored – not black / orange / moldy or any of the other ‘bad news’ signs of a sour dough starter. Poured off the watery stuff …. scooped the goop from the bottom of the jar and transferred to a new, clean jar. And gave it its’ first feeding in a good two years.
Time will tell if she will forgive me or not!
