Amazing Soup

In the last 5 weeks we’ve made it 4 times and it makes a lot of soup! Other than the butter (which I guess could be subbed for) it’s vegan…but don’t hold THAT against it!! It’s SO amazingly good and filling. Intense mushroom flavour. Likely good for you too! We use half the dried mushrooms called for…but an total of 16 oz fresh. We also bought pot barley so we soak it about 2 hours before including in the recipe and cook for about 45 to 50 minutes as a result. We also tend to add up to a cup extra broth as the longer cooking time seems to make it a lot thicker – almost stew like without.
My only fear is that we’re having it so much hope we don’t get overloaded and it becomes something we never want to see again after the COVID-19 passes.
